- Chicken (2)
- Salt (1 tbsp)
- Lime juice (1 tbsp)
- Oil (3 tbsp)
- Bay (3)
- Kaffir lime leaves (5)
- Coconut milk (400 ml)
- Shallot (100 gram)
- Garlic (4 cloves )
- Red cayenne chilies (5 to 10)
- Ginger (2 inch)
Instructions to make Yummy Indonesian Nasi Padang Recipe
Rub chicken with salt and lime juice in a mixing bowl,. Set aside for 30 minutes, then rinse and dry.
Heat oil and sauté spice paste until fragrant, about 3 minutes. Add bay leaves, kaffir lime leaves, coconut milk, and the chicken. Bring to a boil
Lower the heat, and simmer until the chicken are fully cooked and the sauce is slightly reduced.
Turn off heat, strain the chicken, and set aside the sauce for basting. Preheat oven broiler to high for 3 minutes. Line a baking tray with aluminum foil.
Transfer chicken to prepared tray and broil until the surface has charred, about 3-5 minutes each side. Baste the chicken with the sauce as needed.
